This summer if you are in Teton Village, lunch at Jackson Hole Mountain Resort’s RPK 3 is a must. The menu has a lot of fresh options for whatever strikes your mood. Share starters like pork frites or homemade hummus. If you want to go lighter, try a summer salad (the herb-filled garden goddess dressing is a highlight) or the tabouleh bowl. Popular choices include classic burgers as well as a falafel pita and Idaho trout and chips.

If you are in the craving a cocktail, you are in the right spot. RPK 3’s drink menu is loaded with signature cocktails. Think, summer sangria, a tea spiked with Wyoming Whiskey, and my favorite, the jalapeño cucumber margarita. The resort offered to share this recipe, so try it out next time you want to impress summer guests. Or better yet, take them to RPK 3 for happy hour, held from 3-5 p.m. There are great deals on drinks ($4 well, $5 beers, $6 wines and more).

RPK 3’s Cucumber Jalapeño Margarita
Ingredients
- 1 1/2 ounces jalapeno infused tequila
- 1/4 ounce Cointreau
- 1/4 ounce simple syrup
- 3/4 ounce cucumber puree
- 1 ounce lime juice
- Tajin, cucumber ribbon and jalapeño slices, for garnish
Instructions
- Mix all ingredients into a shaker filled with ice. Shake until chilled and poor over a rocks glassed rimmed with Tajin and filled with ice. Add cucumber ribbon and jalapeño slices.
